Eco?

Eco can be a difficult term. Some think eco is limiting food intake to a breath. Some people limit themselves to the extent health becomes a victim of this virtuous life. Some couple it to a spiritual path. Others use the lable to hide dirt. We are somewhere in the middle and learning. Being in the middle to us is also being in the now. As much as we humanely can.

Law keeps us sometimes in the middle where we would want to do things like hospitality development in a natural setting. Without the need to connect to grid, sewer of whatever. Permits are depending on legal constraints that involve being connected to the grid. Not connecting means no permit. Therefore no sustainability. As we want our initiative to flourish we have to abide by present and local laws. Until the law changes we connect to the grid.

About our kitchen & eco; We like eating what nature provides. Our dishes are inspired by many cooks. Certainly also domestic cooking. Fresh from forest or garden, mushrooms, onions and all the kinds of food directly from the ground. Also wild animals can appear on the menu. To us eco is what fits the natural cycle. Never too much. Always creative. Sometimes simple. Sometimes sumptuous. We enjoy our cooking.

We cook on the wood out of our forest. One less consumption of fossil fuels.

Our garden is producing delicious vegetables, fruits and herbs. What we don't have we buy. We buy as much as possible things that are biodegradable, compostable and local.

About hosting; An elderly monk once had company of a younger one. They visited a host for a sumptuous diner served by the proud family of the host. The younger monk limited his intake to a pea. All the while looking very pious. As they went home, the older monk, thanked the host warmly and invited him to the party next week. During their walk home the older monk told the younger that if next time he made his vow more important than the hospitality of the host, he could eat his pea in his own cell.

Eco and terrain maintenance; With 14 hectares in the beginning we fell to machine addiction. Presently we try to see how simple we can clean a piece of terrain. We prefer to work without machines. They are noisy, stink and break down. The service and fuel supply adds unacceptable burden on our kilometer account. Some times a start can't be made without. We are searching for the best ways. And learning along the road.

Eco and building; We are learning along the way what it means to build along building codes. To have my eco extreme wish come true I would not use electricity, only water from the source etc. I will make a next step for my personal life. On the other hand I have a family to support, hospitality business to develop with all legal constraints. That is present day reality. We hope to come so far we can live as much as possible on local generated energy, water etc. That is one of our challenges.

Eco and our place in the universe; We are on the pearl earth. At least from space that's what it looks like to me. Also paradise is so close you cannot touch it. On the other hand, what you see is light from bodies that can be long gone. Sucked up by black holes or whatever deep spacial fenomenon. The wonder of us being in the right place is a to us a miracle. That's eco to us. So we would not support trips to mars 'or beyond'. There is only one earth. Let's enjoy it. Together with all beings.
